Hainanese Chicken Rice & another Hollydale Chicken Favorite



Hainanese chicken rice is a simple dish, but difficult to prepare. It is sort of loose Chinese risotto sizzled in a pot ... then simmered in chicken stock, chicken fat, and fragrant with ginger. The chicken rice is usually garnished with a portion of the chicken itself, and there is always a scattering of fried garlic! Ohh baby kiss me now.
You might want a bowl of soup to eat with the chicken rice too. Three sauces should be available served in bowls.

1. dark soy sauce
2. sauce of pulverized ginger in oil
3. chopped or pureed chilies lightened with a few drops of lime.
