Low Carb Mock Apple Pie ~~

Recipe:


Precooked crust (I used Dixie Diners Lo Carb mix -- 5 carbs per piece)

4 cups fresh zucchini (peeled, seeded, one inch dices)
Water to cover in large sauce pan)
1/4 cup lime juice
Simmer for an hour (reducing liquid)
3/4 sugar sub (I used a Splenda/etheriol mix)
1TB corn starch Mix with sugar substitute to avoid lumping.
1 tsp apple pie spice
Simmer till sauce forms. Spoon into pie shell.

Cool. Eat.
(11 grams carb per serving)
